Lemon Butter Pickerel

This is a great, somewhat healthy pickerel recipe. A nice substitute for beer battered deep fried fish.

2 Pickerel Fillets
2 TBSP Butter
2 TSP Lemon Juice
1 Clove Garlic
1 TSP Dill Weed
Salt and Pepper
Flour

Preheat frying pan over medium high heat with 1TBSP of olive oil
Salt and Pepper pickerel fillets
Toss pickerel fillets in flour
Fry pickerel in frying pan over medium high heat for 3-4 minutes a side, or until fish flakes easily
Remove fish to another plate and keep warm
Melt butter in saucepan
Add chopped garlic, lemon juice, and dill weed to butter and lower heat to medium low
Simmer for 3-4 minutes, or until garlic is browned slightly
Pour sauce over fish, let soak in for a couple of minutes before serving
