Sun Dried Tomato Pasta

We love pasta, and I love experimenting with new sauce ideas, instead of always eating the same old meat sauce. Here's a recipe for a really tasty sun dried tomato pasta sauce.

1 jar sun dried tomatoes in oil
1 can diced tomatoes
1Tbsp basil
2 cloves garlic, finely chopped
1Tbsp red wine vinegar
2Tbsp extra virgin olive oil

In a medium sauce pan, heat oil from sun dried tomatoes, and olive oil.
Over medium heat, saute garlic for 2 minutes, or until lightly browned.
Add basil, sun dried tomatoes, and canned tomatoes.
Simmer for an hour.
If you don't like the chunks of sun dried tomatoes, pour sauce in blender and pulse a couple of times.

This sauce is great on tortelini, or any pasta for that matter.

Sweet and Sour Sauce

Finally figured out the perfect sweet and sour sauce. Amazing on meat balls in the slow cooker, and really easy.

2c Ketchup
1c Brown Sugar
1Tsp Soy Sauce
2Tsp White Vinegar

Mix the above ingredients until blended. Pour over meat balls in slow cooker, cook on low for 7 hrds. Mmm

Dill Butter Tilapia


We're both fish lovers in our household, we usually eat salmon and tilapia at least twice a week. This is my absolute FAVORITE tilapia recipe. There are never any left overs after this one.

2 Tilapia Filets
3 TBSP Butter
1 TBSP Dried Dill
1 TSP Garlic Seasoning

Melt butter in a saucepan, add dill and garlic seasoning.
Preheat oven to 375F.
Run tilapia under cold water, pat dry.
Spray baking pan with cooking spray, place tilapia in the pan, pour sauce mixture over filets.
Cook for 25-30 minutes, or until fish flakes easily.

I usually serve this over rice, or with a side of roasted vegetables.
