Greek Baked Shrimp

Yes.... It's been a while, between 2 moves and the lack of appliances I haven't been cooking or posting but I had the urge today and a serious artichoke craving. So here's my Greek baked shrimp Ingredients Shrimp Canned artichoke hearts 1 tomato Feta cheese Olive oil Balsamic vinegar Salt and pepper 2 garlic cloves Heat oil in a sauté pan over medium heat Add garlic tomatoes and artichokes all diced Heat for 10 minutes, add balsamic salt and pepper, cover and let simmer 5 minutes Mix shrimp with sauté mixture in a baking dish, top with feta Cook at 450 for 15

Caprese with avocado and balsamic reduction

A twist on your average caprese salad Ingredients 1cup balsamic fig vinegar 4 1/4in slices of fresh mozzarella 2 Roma tomatoes 2 cloves garlic 1/2 ripe avocado 2 tbsp fresh basil Directions -in a deep pan, heat vinegar to boil -continue boiling until reduced to 1/2 -once reduced, remove from heat and add chopped garlic -cool to room temperature -slice tomatoes, avocados and cheese -layer and sprinkle with oregano -drizzle cooled balsamic reduction over salad Enjoy

Greek style gnocchi

Just trying out something new, and it turned out amazing. Ingredients 2 Roma tomatoes cut in half lengthwise 2 cloves garlic, unpeeled 1 shepherds red pepper, cut in half lengthwise, seeds removed 2 tbsp olive oil Salt and pepper 2 tbsp oregano 3 tbsp feta, crumbled Gnocchi (I was lazy today and used pre packaged) Kalamata olives Directions -place roma tomatoes, garlic and red peppers on baking sheet -drizzle with 1tbsp olive oil -sprinkle with salt and pepper -bake in 400degree overn for 20 minutes -remove and let cool -remove red pepper peel and garlic peel -toss tomatoes, peppers, garlic in blender, blend on high until well mixed -add 1tbsp olive oil, 1 tbsp feta and 1 tbsp oregano, continue to blend -cook gnocchi according to directions -toss gnocchi with sauce, garnish with 2tbsp feta, kalamata olives and remaining oregano Enjoy :)

Banana chocolate protein muffins

Banana chocolate protein muffins A quick healthy energy boosting breakfast Ingredients 3 mashed bananas 1 1/2 cup whole wheat flour 1 tbsp unsweetened cocoa powder 4 tbsp chocolate protein powder 2 eggs 1 tsp vanilla 1/2 tsp salt 1tsp baking soda 1/2 cup sweetener Directions Mix together eggs, sweetner,bananas and vanilla in bowl In a separate bowl, mix together flour, cocoa, protein powder and baking soda in another bowl Blend the dry ingredients into the wet, mix well Bake in greased muffin tin at 375 for 20 minutes or until toothpick inserted comes out clean

Balsamic honey baked Brie

Super easy super yummy appetizer, goes amazing with wine

1 whole Brie wheel
1/2 cups balsamic vinegar
1tbs sugar
1tbs honey

Heat balsamic, honey and sugar together in a sauce pan, 5-10 minutes, stirring constantly until desires thickness
Bake brie on serving plate for 10mimutes at 350
Remove Brie from oven, pour sauce over top
Serve with crackers

Proscuitto Wrapped Pork Tenderloin with Thyme Roasted Apples


Something completely different and still weight watchers friendly.

Ingredients:
Pork Tenderloine (2lbs)
5 thin slices proscuitto
1tbsp dijon
1tbsp white balsamic vinegar
2 apples slices thick
4 fresh thyme sprigs
salt
pepper
1tbsp olive oil

Pre-Heat oven to 425
Toss apples in olive oil, thyme, and a little bit of salt and pepper
Bake for 10 minutes in a deep baking dish
Meanwhile, coat pork in balsamic and mustard mixture
Wrap with proscuitto
Remove apples from oven, place pork in the middle of the apple mixture
Return to oven and bake another 20 minutes

This is an amazing dish, the sweetness from the apples really adds to the flavor of the pork. I served it with garlic sauteed carrots and green beans.

Beurre Blanc (white wine sauce)

One of my new years resolutions is to get back on weight watchers and drop 40lbs, another one is to blog more... But obviously I'll be
cleaning up my recipes. Today I made a Beurre Blanc sauce to serve on chicken breast. I served it with whole wheat
pasta tossed with spinach, tomatoes and artichokes. Here's my light Beurre Blanc recipe:

Ingredients:
2tbsp diced onions
2 diced garlic cloves
4 sprigs of fresh thyme
1cup chicken broth
1/4 cup white wine
1tbsp butter
Salt and pepper to taste
Cooking spray

Spray a deep pan with cooking spray
Sauté onions until just browning
Add garlic, cook 2 minutes
Add chicke broth, cover and simmer at medium for 5minutes
Add full thyme sprigs, cook another 2-3mimutes
Add white whine, cover and simmer 5 minutes
Remove from heat, add butter, stir until blended
Sprinkle with salt and pepper to taste

It's not a thick sauce like most, but the flavor makes up for it.
I baked my chicken breast then poured the sauce on top before serving, but you could also bake your chicken in the sauce.
