Vanessa's Red Wine Veggie Soup

Made this tonight with whatever I had lying around the house. Cooked it with some red wine (non alcoholic, but you could use whatever you'd like) to try out some new flavors and it worked really good.

1 cup chopped carrots
1 can corn kernels
1 cup shredded purple cabbage
1 can diced tomatoes
1 diced shallot
2 mashed garlic cloves
1tbsp extra virgin olive oil
3tbsp red wine
1tsp white sugar
salt and pepper to taste

In a large sauce pan, heat oil over medium heat
Add mashed garlic and diced shallots
Add 1tsp white sugar, simmer for 5-10 minutes
Add red wine, simmer another 5-10 minutes
Toss in carrots, corn and cabbage, cook for 5 minutes
Add chicken broth
Salt and pepper to taste

Just finished trying this out, and it turned out very good :) We'll see how it goes over for lunch tomorrow.
