Stuffed Chicken

Made this tonight for the first time, turned out really yummy.

2 boneless skinless chicken breasts
1 small brick of soft goats cheese
1/4 cup chopped baby spinach
2 TBSP fresh basil
1/2 tsp all garlic seasoning
1 TBSP olive oil
salt and pepper to taste

Heat medium skillet to over medium heat
Add olive oil, spinach basil and garlic seasoning
Meanwhile, preheat over to 375 degrees
Clean and remove excess fat off of chicken
Slice a slot in side of chicken
After cooking spinach and basil for 5-10 minutes, lower heat to low and add goats cheese
Stir frequently for 1-2 minutes
Remove from heat
Stuff each chicken breast with mixtures
Close using tooth picks
Season with salt and pepper, and toss some finely chopped fresh basil on top
Bake for 35-40 minutes at 375

I served this today with roasted tomato garlic pasta :)
